'NDUJA SAN DONATO is one of the first artisanal companies established directly in the birthplace of ‘nduja: Spilinga, at the foot of Monte Poro, in the province of Vibo Valentia.
Every day, it carefully selects the finest raw materials and meticulously follows the ancient production process, respecting all traditional phases, with particular emphasis on natural smoking and slow curing.
It does not use preservatives, artificial colorants, or additives.
Only meat, salt, and sun-dried Calabrian red chili pepper, because, in its philosophy, quality is something simple.
History
The company’s history dates back to the mid-20th century when, in the 1950s, Antonio Pugliese (c. 1921), the family patriarch, began his career as a master pork butcher. At that time, he would travel from farm to farm, assisting friends and relatives during the pig slaughter, an occasion fervently celebrated by Spilinga families after a long year of hard work in the fields.
In the Poro region, it was customary to rely on expert hands for the most delicate phases of sausage preparation. This allowed those who specialized in such tasks to refine, over time, techniques and secrets of the local charcuterie tradition.
By the late 1990s, two of Antonio's descendants, Armando (c. 1956, known to all as Tommaso) and Pasquale (c. 1964), decided to turn the family passion into a concrete business project. Despite their professional experience in other sectors, they embarked on this new venture with a clear purpose: to preserve and continue the family legacy.
The challenge was to establish a genuine artisanal production company for Spilinga ‘nduja and typical Poro cold cuts, in the same countryside where it all began, involving their father Antonio from the very start.
