The Lagar Quixote winery was born from the hand of its promoter, César Augusto Laguía Ortega, as a way of claiming the maximum ecological exponent, putting it before the merely economic.
What do LAGAR QUIXOTE do?
The idea was to show that the best wine can be obtained by prioritizing respect for the environment over everything else, because the vineyard is really where the wine is made, in the cellar the only thing to do is not spoil it. And who better than the wise Nature to elaborate it, also in its own field. This countercurrent and quixotic thought materialized in 2014 by producing the first ancestral sparkling wine made in La Mancha, and also from 100% Natural Agriculture… its name “AIRE NATURAL”.
What is the value proposition of LAGAR QUIXOTE?
To carry it out, we must consider that for more than 33 years we have not added anything to the vineyard (fertilizer, sulphites, phytosanitary products, irrigation) and more than 3 that we have not tilled... but we do interact with the vines directly, showing them our best intentions... for this we dig, crush, weed, weed green, stand out... we pamper them for their most natural comfort. And, when the time comes, we harvest at night selecting each cluster because we want only the best and in the best conditions without caring about the yield. That is why there are years that we have 200 bottles and another 1500 bottles. And if in the vineyard we do not deal with anything, in the winery it could not be otherwise, so the underground Lagar Quixote is sanitized and waiting in the best conditions of cleanliness and temperature so that the grapes that arrive at dawn are as comfortable as possible. . Thus begins the process of elaboration in the cellar for the future ancestral sparkling wine, pampering every moment, without adding anything or filtering, choosing only the flower must (without pressing). When it is in full fermentation, it is bottled so that the fermentation inside the bottle ends, producing the necessary endogenous overpressure... and after 'at least 9 months, it is disgorged, filled and corked to wait for whoever wants to enjoy what, quite possibly, is the most natural wine in the world.
