Caviaroli was born in 2011 as a result of the previous two years of work by 2 of its founding partners, Ramon father and Ramon son, both engineers and with extensive experience in the field of mechanics, electronics, chemistry, biotechnology and the most important in thinking disruptively. They solved a problem that many had considered unsolvable: Encapsulate the olive oil in such a way that the oil did not undergo modifications and remained liquid inside.

And when it comes to innovation, Caviaroli has always believed that it is the main driver of its success. Proof of this is that in 2016 and together with Albert Adrià, chef of the Barcelona restaurant Tickets, they developed Caviaroli Drops.

The Drops are a dish, an appetizer, an experience originally created at elBulli and converted into a symbol and banner of an entire cooking style, molecular cuisine. These Drops are spherical olives, a game with the client who sees and smells an olive but when he bites it he discovers that it is liquid inside.
